Kristina’s Kitchen

Kristina’s Kitchen

I had the most pleasant dining experience at Kristina’s kitchen in southern Kentucky. I had more than a meal. I not only received a great meal, but discovered a health resource. The restaurant offers cooking schools as well as numerous healthy foods that you can take home with you.

We experienced a breakfast brunch. The tofu eggs were sensational, seasoned to perfection and complemented with lightly cooked kale and a millet patty with exceptional taste and texture. The food was locally grown and chemically free. After the meal I felt like saying, “Yumm!”

This is an establishment that is a destination meal. You do not just happen to pass by and drop in though this is possible. I would suggest planning a trip and make dining an event. I was able to learn about nutrition and healthy substitutes. Kristina has a wealth of knowledge on plant- based nutrition. She specializes in teaching other how to prepare meals that are not only nutritionally superior, but far better tasting.

If you are in the south and passing through southeast Kentucky, make Kristina’s Kitchen part of your itinerary. I received much more than a good meal. It was definitely worth the drive.

Good Foods Market & Cafe, Lexington

Good Foods Market & Cafe, Lexington

At the end of our visit to Lexington my wife and I had breakfast before heading back home. We heard about this market that has a salad and hot bar attached to it. It’s called Good Foods Market & Cafe.

Before eating we decided to look around the market, there were plenty of natural foods and healthy items to choose from throughout.  My wife picked up a couple items for home.  We then headed to the hot breakfast bar, they had many items to choose from, vegan to real sausage.  I stuck with an all vegan plate. I chose vegan biscuits and covered them with scrambled tofu and cauliflower topped with vegan gravy. I added a side of rosemary potatoes and vegan sausage patties.  As you can see in the photo I like to add a little spice to my food.  I also got some fruit salad to finish my meal. The food was fresh and delicious.

There were so many items to chose from. Hot soup, hot bar, salad bar with a wide variety of prepared salads as well as make your own and a fruit bar. They also make hot and cold sandwiches, gourmet coffee and tea. There is plenty of seating in the cafe area, more than you would find in most cafes. They even have a full recycle area for you to throw away items including putting food scraps and paper items into a can that goes to a compost pile. We enjoyed our time there before getting back in the truck for the four hour journey home.

Alfalfa, Lexington

Alfalfa, Lexington

This restaurant has been around for over forty years and prides itself in fresh ingredients. The first time I ate there was when I was in school at the University in the nineties.  My favorite dish was the Red Beans and Rice.  I ate there recently and my favorite dish is still the same, though, I now add “hot” sauce to the dish.  The best word to describe Alfalfa is vibe. The place has a vibe to it that you have to eat there to explain. The original restaurant was across the street from the University of Kentucky. They are now located on Main Street. There is a wide variety of food for vegans to vegetarians, to meat eaters. Many go just for the Buckwheat pancakes.  If in Lexington, this is the perfect place for a brunch.

Earth Friends Cafe, Louisville

Earth Friends Cafe, Louisville

So three of us trekked to Earth Friends Cafe nestled in the Nulu district and were delighted to see garden plots situated outside the entrance which really enhances the words local and fresh. The waitress shared that the #1 seller was the Black Bean and Rice bowl for all variety of eaters.

Let me say that it was delicious! Something hearty that you could eat everyday. The vegan pancakes were solid and filling. The breakfast burrito had good texture and flavor. Personally if they added the jalepeño dressing it would have put it over the top. The lavender lemonade was a new worthwhile experience. All in all we would return without hesitation.
